Last night BBQ, since I was unable to update dinner, it was basically a cheeseburger (no roll) a scoop of potato salad and a small scoop of macaroni salad. Not too bad, but when I got home - inhaled a Snicker Bar. I know it shold not of even been in my house (technically, it wasn't) I was searching my purse (another place it shouldn't have been), and at the bottom - THERE. IT. WAS., it was like a gift from the Chocolate Overlord (yes, Chocolate Overlord)....I do not look at chocolate as being governed by an angel, a guardian, a god....it's purely the work of some sort of devil - why else would it be so, so good, but be so bad??? Typically a small piece of chocolate is not bad for you, or even two small pieces...BUT WHO CAN STOP AT ONE or TWO "SMALL" Pieces???
Onto today...I have stated before that mayonaise is not allowed on this diet, but looking through few recipes included in book - low and behold there was a recipe for mayo - Who makes mayo other than Hellman's???
I ended up making (2) recipes from the book today. Mayo & buckwheat pancakes (recipes below)
Breakfast: 2 Buckwheat & wheat germ pancakes, 1/2 cup natural applesauce, Chobani non-fat Blood Orange yogurt

Lunch: Tuna fish made with my homemade mayo (who knew only 5 ingredients and you have manyo??) over a bed of lettuce and chopped tomatoes, an orange

Dinner: Three Quinoa cakes, a box of broccoli florets, 1/2 cup non fat cottage cheese
Let me tell you - I am going to be eating Quinoa Cakes for a while. The other day when I told you I had Quinoa everywhere, I was not kidding. I had dried quinoa all over the counter tops (from my attempts at pre-rinsing before using) and floor, I found cooked quinoa in my hair and my ears. I ended up freezing the extra I made because I really just did not know what to do with it! I spoke to my Dad and he eats it as a breakfast - he said he justs adds brown sugar, raisins and a dash of cinnamon - sort of like oatmeal. Something I may have to try to get rid of the extra.
Mayonnaise Recipe (Makes 1 cup)
1 egg
5 ml (1 teaspoon) mustard
5 ml (1 teaspoon) lemon juice
2 ml (1/2 teaspoon) salt
250 ml (1 cup) olive oil
In blender, put egg, mustard, lemon juice and salt, blend for about 30 seconds. With blender running add oil in a thin steady stream through the opening of the lid. Mayo is done when it is thick and creamy. Store in refrigerator. Extra Note: to "stretch" mayo, add one beaten egg white.
Buckwheat Pancakes (makes 2 pancakes)
75 ml (1/4 cup) buckwheat flour
15 ml (1 tablespoon) wheat germ
75 ml (1/4 cup) water
5 ml (1 tsp) vegetable oil
Mix dry ingredients. Gradually add water and mix into smooth batter. let sit 5 minutes. Over medium heat, heat oil then add half the batter tilting pan to cover, Cook turning once. Garnish with fruit, sugar free jam or non-fat cheese.
I made the mistake of thinking I had Buckwheat flour at home, but I had buckwheat grains. The pancakes were tasty, grainy and plain. Using flour I am sure I would of had a smoother "pancake" like "pancake"....but what can you do - I wasn't going to run out at 6am to get buckwheat flour.
The homemade mayo, not Hellmans's, but not bad. It does have a slight mustard taste and I would think if you are not a famn of mustard you could probably skip it.
